Scientists have developed plant-based steaks from pea protein that accurately imitate the marbling of real steaks, they claim.Developed in Switzerland, the fake steak uses pea protein for the red 'flesh' and an oil-in-water emulsion for the spindly lines of white fat. Since the emulsion's fat content can be reduced significantly, the plant-based steak is healthier than the animal-based original, as well as more ethical.
